The Sea Star School, a Waldorf Education School based in Boca Raton and serving students from three counties, is having its first Farm-to-Table Dinner in Gulfstream on April 2.
Based on German educator Rudolph Steiner’s philosophy of emphasizing the role of imagination in learning and integrating the intellectual, practical and artistic development of children, the school has a variety of programs from Mommy and Me and early childhood development up through the eighth grade.
“This is a night for our local communities to connect the dots from growing food to growing minds,” said Colleen Paul-Hus, host of the event, along with her husband, Richard, and whose four boys attend the school. “We want to bridge the gap between education and our environment.”
On the board of the school and dedicated parents, the Paul-Hus family has a large plot of land on which they grow nine garden beds of strawberries, mangoes and oranges, and vegetables, including spinach, herbs, tomatoes and potatoes.
Indoors, they have an observatory beehive where their children can watch bees building their hives.
“It’s important that children observe and learn from nature,” Colleen Paul-Hus said. “We’re disconnected from our food sources and how they’re grown. This event is an opportunity for the community to meet local farmers and purchase locally grown and raised food.”
Participating in the event are local farms including Alderman Farm, Sons and Daughters Farm, Solace Farm, Gratitude Garden, The French Bakery and Café, Green Bar and Kitchen, Saltwater Brewery, Heritage Hen and the Paul-Hus home garden.
The Heritage Hen farm on Haverhill Road in Boynton Beach is run by husband-and-wife team Svetlana and Marty Simon.
Marty Simon, a former general contractor, and Svetlana Simon, a former lawyer and architect, gave up their corporate lives for a different lifestyle.
“Nutrition is so important for children,” Svetlana Simon said. “We wanted to be involved in the Sea Star event because many of the parents are our customers and it’s for an educational system we believe in and support.”
“Kids need the proper nourishment and it’s so rewarding to see the fruits of our labor so immediately,” she said.
The chef for the event is celebrity chef Cindy Barbieri, author of “Paleo Italian Cooking” and a frequent guest on “The Dr. Oz Show.”
Fourth-grade teacher Joan Hourican, former program coordinator at Pine Jog Environmental Education Center, said, “Our goal at the school is to raise healthy kids and that means movement, the arts, stories and healthy nutrition to nurture their souls.”
The Sea Star Farm to Table event will be at 6 p.m. April 2 at The Paul-Hus Residence, 3500 N. Ocean Blvd.
